Ginger Chicken Stir Fry with Noodles

Ingredients

  • 1 1⁄2 cups cooked
  • whole wheat spaghetti noodles
  • 2 tbsp crushed unsalted peanuts (optional)
STIR FRY
  • 1 tbsp olive oil
  • 1⁄4 cup orange juice
  • 1 tbsp dried ginger
  • 2 cloves garlic, minced
  • 1⁄4 cup water
  • 1 cup green beans
  • 1⁄2 cup carrots, shredded
  • 1⁄2 cup red bell peppers, sliced lengthwise
  • 1⁄2 cup onions, sliced
  • 8 oz boneless/skinless chicken breasts, sliced in thin strips

Directions

Cook pasta according to directions. While pasta is cooking, heat olive oil in large sauté pan over medium-high heat. Add onion, reduce heat to medium-low and cook until onion is translucent (about 5 minutes). Turn up heat to medium and stir in spinach. Allow to cook down (about 4 minutes). Add unsalted vegetable broth and simmer for several minutes. Remove from heat; stir in pepper, basil and tomatoes.

Toss vegetable mixture together with pasta
