Spinach and Tomato Pasta with Fresh Basil

Ingredients

  • 4 cups cooked whole wheat pasta shells (no added salt)
  • 1 tbsp olive oil
  • 1 medium white onion, chopped
  • 4 cups fresh spinach, chopped
  • 1–8 oz container of cherry tomatoes, halved lengthwise
  • ½ tsp black pepper
  • 1 cup unsalted vegetable broth
  • ½ cup fresh basil, chopped

Directions

Cook pasta according to directions. While pasta is cooking, heat olive oil in large sauté pan over medium-high heat. Add onion, reduce heat to medium-low and cook until onion is translucent (about 5 minutes). Turn up heat to medium and stir in spinach. Allow to cook down (about 4 minutes). Add unsalted vegetable broth and simmer for several minutes. Remove from heat; stir in pepper, basil and tomatoes.

Toss vegetable mixture together with pasta.
