Quick Mini Spinach Quiches

Quick Mini Spinach Quiches

Ingredients

  • 8 egg whites
  • 1½ cups 1% milk
  • 2 cups spinach, chopped
  • ¼ cup onions, finely chopped
  • ½ cup low-fat, low-sodium cheddar cheese, finely shredded
  • 1 tsp Italian seasoning
  • 1 tsp olive oil
  • Olive oil cooking spray

Directions

PREP 10 MIN | COOK 15 MIN | 4 SERVINGS

Preheat oven to 350° F.

Heat olive oil in large non-stick pan. Add onions and sauté for 5 minutes or until brown. Add spinach and cook until wilted. Set aside and cool.

In medium bowl, whisk eggs and then add milk, seasoning, cheese and spinach/onion mixture. In sprayed mini muffin pans, add batter, leaving some space on top for rising.

Bake for 15 minutes or until cooked thoroughly (when you can insert a knife and it comes out clean)
