  • 2 roasted red peppers, sliced lengthwise (no salt added, store-bought)
  • 4 oz goat cheese
  • 4 tbsp chopped walnuts (0 mg sodium; no added salt)
  • 1 tsp flax seed

Dressing

  • ½ cup orange juice
  • 1 tbsp sesame oil
  • 1 tbsp dijon mustard
  • 1 tbsp fresh thyme, chopped
